The Journey Begins

Your scalloping expedition begins at the dock near McCrae’s, where one of our U.S.C.G. charter captains will welcome you aboard and guide you due west out of the Homosassa River to the scalloping grounds. The ride out is a scenic voyage, taking you through some of the most picturesque landscapes that “Old Florida” has to offer.

Unearthing the Underwater Gems

Once we reach the scalloping grounds, you will be provided with snorkels, masks, and fins. After a brief safety protocol, the hunt for scallops begins! While we cannot guarantee limits of scallops, we ensure that our clients have a fun and fulfilling experience.

As you dive into the clear waters of Crystal River, keep an eye out for the blue ‘eyes’ of the scallops or their shells’ distinct color against the green seagrass. Remember, scalloping is not only an adventure; it’s a scavenger hunt beneath the surface.

Beyond the Hunt: Cleaning Your Catch

Once you’ve gathered your scallop bounty, the adventure continues with cleaning your catch. Cleaning scallops can be a rewarding experience that offers a full-circle appreciation of your maritime journey.

Here’s a basic guide to cleaning your scallops:

Rinse: Start by giving your scallops a good rinse to remove any sand or debris.

Open the shell: Hold the scallop shell flat side up. Insert a butter knife or a scallop knife between the top and bottom shells, and slide it around to cut the muscle attaching the two shells.

Remove the innards: Once the shell is open, remove the innards using a knife or a spoon, leaving only the white muscle (the part we eat).

Rinse again: Rinse the scallop under cold water to remove any remaining grit or debris.

Remember, scallop cleaning can be a bit messy, so it’s best done outdoors. But don’t worry, if you prefer not to clean them yourself, you can always pay one of the locals who will clean and bag your catch for a nominal fee.

From Sea to Table: Cooking Your Scallops

Cooking your freshly caught scallops is the final and most rewarding step of your scalloping adventure.

Here are a couple of simple yet delicious ways to cook your scallops:

Pan-seared scallops: Season your scallops with salt and pepper. Heat a pan over high heat and add butter or oil. Once the pan is hot, add your scallops, making sure they don’t touch each other. Cook the scallops for about 2 minutes on each side or until they have a golden crust. Serve them with a squeeze of lemon juice.

Grilled scallops: Preheat your grill to high heat. Season your scallops with olive oil, salt, and pepper. Thread the scallops onto skewers and grill them for about 2-3 minutes on each side or until they’re opaque.

Remember, scallops cook very quickly and can become tough if overcooked, so keep an eye on them!
